Bobby Flay’s fast-casual concept grows in Arizona

Bobby Flay is bringing his fast-casual burger concept to new ground with an ambitious expansion across Phoenix. Known for his fine-dining background and television presence, Flay is now focused on Bobby’s Burgers, a simplified version of his former Bobby’s Burger Palace. After launching the first Arizona location at Sky Harbor International Airport in 2023, Flay is preparing for multiple standalone restaurants throughout the metro Phoenix area.

From airport debut to citywide presence

The Sky Harbor location served as a trial run for Bobby’s Burgers in Arizona. Situated in Terminal 4, it attracted travelers and helped gauge interest before broader expansion.

Joe Sample, the franchisee behind a Bobby’s Burgers in Orem, Utah, is leading the Arizona rollout. With experience in launching and operating the brand, Sample is positioned to open several locations across Phoenix in the coming years. While exact sites have not been announced, plans include multiple venues throughout the region.

The focus on Phoenix is deliberate, tapping into the area’s rapid population growth, vibrant dining scene, and strong demand for quick-service meals with high-quality ingredients.

A taste of Bobby’s Burgers

The Bobby’s Burgers menu features seven signature burgers, including the Crunchburger, topped with potato chips, and the Bobby Blue + Bacon, which balances smoky and tangy flavors. A plant-based veggie burger and a buttermilk fried chicken sandwich round out the core offerings.

Five milkshake options, such as dark chocolate and cookies and cream, add nostalgic appeal, made with real ice cream and served in generous portions.

The evolution from Bobby’s Burger Palace to Bobby’s Burgers

Launched in 2008, Bobby’s Burger Palace emphasized regional flair and full-service convenience. The concept initially succeeded but faced challenges during the COVID-19 pandemic, which led to widespread closures.

Bobby’s Burgers emerged from this shift with a smaller footprint, leaner menu, and emphasis on franchising. Flay’s new format captures the essence of his earlier menu while better aligning with current market conditions.

Phoenix is a growing market for food innovation, blending national names with strong local eateries. Bobby’s Burgers contributes a new dimension to that mix, especially in the quick-service space.
