Byrne Dairy turns locally sourced milk into shelf-stable products for today’s modern market
Since it was established over 90 years ago, Byrne Dairy (Byrne) has experienced continuous growth, primarily by investing in innovation and technology. The company specializes in extended shelf-life (ESL) and ultra-high temperature (UHT) beverages, offering both refrigerated and shelf-stable formats. Based in Central New York, Byrne operates an ESL and UHT pasteurization plant in DeWitt, and an ESL manufacturing facility in Cortlandville. Through these state-of-the-art co-packing facilities and extensive distribution capabilities, Byrne ensures its customers can deliver high quality products into the hands of their consumers. Thomas Chartrand, who serves as CFO of the company, introduces us to its history and expansion through the years.

“Matthew Byrne founded the company in 1933 and was initially focused on selling and delivering milk directly to consumers using horse-drawn wagons. Over time, Byrne expanded its presence throughout the State of New York, continuing to grow its High-Temperature Short-Time (HTST) pasteurized, or ‘fresh’ milk operations. This growth trajectory continued until 2004, when the company opened its first ESL manufacturing plant just outside of Syracuse in DeWitt, New York. Noticing the increasing consumer demand for ESL products, Byrne transitioned away from the HTST milk category and subsequently opened a second ESL facility in Cortlandville, New York. Additionally, the company enhanced its existing facility in DeWitt by investing in cutting-edge aseptic and shelf-stable capabilities. Its geographic proximity provides essential redundancy for customers, ensuring reliable service and supply,” he begins.
Commitment to excellence
Through its state-of-the-art facilities, Byrne offers a diverse range of dairy products, as Thomas highlights. “While we run a small ice cream facility, our primary focus remains on ESL and shelf-stable dairy. Thanks to our two Northeast facilities, we have established ourselves as a leader in private label and co-manufactured ESL and aseptic dairy, serving customers across the US. Our core products consist of specialty and flavored milks, including lactose-free and organic options, as well as ultra-filtered milks, half-and-half, creams, and coffee creamers available in various sizes and formats.”
Further bolstering its presence across the country and ability to develop its new products, Byrne opened its own innovation center adjacent to its DeWitt plant in 2024. We learn from Thomas how this facility supports the company’s research and development efforts in creating innovative products. “At Byrne, we view innovation as a twofold process. One aspect involves the ongoing improvement and excellence of our existing product lines, while the other focuses on our ability to respond rapidly to customer and consumer demands using market-leading technology. With our state-of-the-art pilot plant, we can quickly develop new, on-trend products and measure their performance in a controlled lab setting. We also partner with both current and prospective customers to carry their ideas forward in a way that allows them to bring their products to life. Above all, our innovation center embodies our commitment to excellence,” he enlightens.
Alongside investing in innovation, the company is also investing $120 million to expand its Cortlandville site. This expansion will effectively double the size of the Cortlandville plant, thereby creating well over 100 jobs. “Beyond making our facility larger, the investment contributes to the enhancement of our ultra-filtered production capacity and installation of a PET filling and processing line, empowering us to produce aseptic and ESL beverages in dairy and non-dairy formats,” Thomas explains. “As part of this expansion, we will introduce advanced filling technology, with the most exciting addition being a new plastic bottle line, which will allow us to focus on the high protein, ultra-filtered milk market. Moreover, the new plastic bottle line will have the capability to manufacture both Aseptic shelf-stable and ESL products.
“Furthermore,” he adds, “we will add over 3000 pallet spaces, which will allow us to continue to penetrate new markets and develop different formats for our products. For now, we are eagerly anticipating the expanded production capabilities of our ultra-filtered milk, which has gone well beyond our expectations, as well as other innovative products that are still in the pipeline. Our investment to expand the facility in Cortlandville will allow us to continue to grow with our customers and provide them with more solutions.”
Sustainability strategy
Next, Thomas touches on the topic of sustainability, an issue that is top of mind for Byrne as for many businesses in the food, and more specifically dairy, industry. “Most of our milk is sourced locally, from within a 50-mile radius of our facilities, as we strive to make our operations more sustainable. By prioritizing hyper-local sourcing of critical materials like milk, we not only ensure the highest quality products but also lower our environmental impact. To further align with our sustainability efforts, we have invested in a modern, efficient truck fleet that optimizes transportation routes and reduces emissions. Additionally, we drive a waste reduction program across our organization, with the aim to use recycled materials as much as possible. Our efforts also extend to minimizing water and energy consumption, enabling us to keep our costs competitive while reinforcing our green credentials in the market,” he informs.
Having recently completed its ninth decade in business, Byrne anticipates celebrating the significant milestone of its 100-year anniversary in 2033. As he reflects on the company’s past accomplishments, Thomas uncovers the key factors that have been integral to its longevity and continued success. “Over time, we have built our reputation as the supplier of choice for private label and co-manufactured brands by also being the employer of choice. Benefiting from industry-leading

employee retention and engagement rates, we have consistently been able to retain the trust of our customers throughout the years. Our commitment to developing our people for the long term is evident, with over one in five team members having been with Byrne for more than ten years. Meeting market demands
As 2025 comes to an end, Byrne is ready to carry this legacy forward into 2026, continuing to make waves in the industry and remain a trusted partner to its customers. “In the upcoming year, our primary focus will be on the build out and completion of our Cortlandville expansion and PET bottle line. Alongside that, 2026 will be dedicated to growing our ultra-filtered milk portfolio in collaboration with our private label and co-manufacturing partners, while also exploring innovative opportunities in new and exciting categories. Throughout our history, we have relentlessly innovated and adapted to meet market demands, ensuring that we are where our customers need us to be.
