How Summit Food Service supports safer and smoother operations for correctional facilities across the US

As one of the largest providers of corrections-focused food and commissary services in the US, Summit Food Service (Summit) knows that food, commissary, and related technology have a big impact on the operation of correctional facilities. For more than 60 years, Summit’s experienced team have worked closely with clients, including state-wide operations and some of the country’s largest metropolitan correctional facilities, to provide the best possible experiences and positively impact their facilities, from driving good inmate behavior to improving job satisfaction.

“We provide turnkey correctional foodservice, such as menu planning, procurement, staffing support, compliance, training, and on-site operations – all built around nutrition standards and security requirements. We also support commissary programs that enable residents to access approved items and help facilities run efficient, well-controlled operations.”

Summit’s foodservice programs provide corrections clients with quality food, consistent portions, on-site team training, customized menus, and menu alignment with state and national guidelines. The company also provides staff dining programs from full cafes to micro markets, focusing on fresh and convenient menu options that positively impact employee productivity and long-term retention.

On top of foodservice, Summit offers fully integrated, industry-leading commissary services, including intake technology, inmate banking software, monitored inmate email, ordering solutions, and fulfilment accuracy systems. The company also offers comprehensive laundry management programs, utilizing advanced technology to drive cost efficiency and location accuracy. Summit’s ‘Outside Inside Connection’ program is a web-based system that provides an inmate’s friends and family with the ability to purchase a special meal or gift for them. As a powerful tool for connection and rewarding good behavior, this program is testament to Summit’s commitment to positively impacting the lives and experiences of inmates.

Consistent quality

Commenting on the role Summit plays in the smooth operation of correctional facilities, Roshon continues: “Our work is essential, and we take that responsibility very seriously. When we do our job well, we help facilities run better and become better places to live and work. We live our mission by delivering reliable service, treating people with dignity, and helping facilities run safe and smooth daily operations. This is evident in our standards; we provide consistent meals, responsive service, strong training, and a culture of respect and accountability.”

However, Summit must carefully balance quality and cost. “We start with disciplined forecasting, standardized menus, and tight inventory controls, then continuously improve through waste reduction and process efficiency,” Roshon explains. “The goal is simple: deliver consistent quality and nutrition at the best possible cost without compromising safety or service.

“Also, technology really helps us to operate more precisely in terms of forecasting, inventory management, ordering, reporting, and quality controls,” he adds. “The result is better visibility, faster decision making, and strong consistency across facilities. We’re constantly looking for areas of improvement, and we’re currently focused on operational standardization, process improvement, and targeted investments that strengthen quality, consistency, and efficiency. Wherever we’re investing, the objective is the same: better outcomes for our clients and better support for our teams.”

To effectively deliver its services, Summit leverages an extensive supply network. “We treat suppliers as long-term partners, fostering clear expectations, honesta banner for "SUMMIT" with a message of appreciation communication, and performance measured by quality, availability, and service,” Roshon says. “We also prioritize continuity of supply and transparency, because reliability matters just as much as price in our environment.”

People-first leadership approach

On a more personal note, we ask Roshon about his career journey and his approach to his role as President. “I’ve built my career in operations and service leadership, with a focus on accountability, people development, and execution,” he shares. “What I love about Summit is that the work matters every day; we support essential operations, and we do it through strong teams and partnerships.

“My role as President is to stay close to operations, invest in our people, and strengthen client outcomes through consistency and continuous improvement. Personally, I want to elevate our standards even further when it comes to service, safety, training, and innovation, while building a culture where people are proud of the work we do.”

With strong experience and a clear focus on consistency and innovation, Summit clearly plays a vital role in shaping the daily operations of correctional facilities across the US. By combining high-quality foodservice, advanced commissary technology, strong supplier partnerships, and a people-first leadership approach, Summit delivers solutions that extend beyond just meals.

“2026 is about execution and momentum,” Roshon concludes when we ask about the future. “We’re focusing on tight operational performance, disciplined cost control, and continued improvements in service quality. We’re constantly sharpening consistency across our sites, as well as expanding tools and training that help our teams succeed. In five years, I’d love for Summit to be the clear standard for correctional foodservice and commissary, known for our reliability, integrity, and measurable performance. That means stronger partnerships, scalable best practices, and a workforce that’s trained, supported, and proud.”
