Eric Martino, President of the company’s Cafe and Retail division, retraces the company’s history as well as his own. “Starting off my career as a busboy, I worked my way up the ranks. I joined the Hard Rock Cafe leadership team approximately nine months ago, bringing in my extensive background in culinary arts, marketing, and operations. Being a part of this iconic brand has been a dream come true for me. Hard Rock Cafe has always held a special place in my heart because it seemed like everyone I knew owned one of the brand’s t-shirts or celebrated a significant event there. Moreover, I found the memorabilia to be truly captivating,” he begins. “Founded in 1971 in London as a casual diner by Isaac Tigrett and Peter Morton, two Americans dedicated to crafting the perfect burger, Hard Rock Cafe marked its first foray into the US with the opening of a location in Los Angeles in 1982. From there, it quickly grew into a global phenomenon. This expansion was further aided by the inception of its iconic memorabilia collection, initiated when Eric Clapton generously donated his guitar. “Since then, Hard Rock Cafe has evolved into the world’s largest trove of music memorabilia. Over time, the brand has hosted many concerts as part of the renowned Hard Rock Calling festival in London, Barcelona, and even the Vatican, showcasing some of the most prestigious artists. The Seminole Tribe of Florida acquired Hard Rock Cafe in 2007, and alongside CEO Jim Allen, a remarkable leader in the hospitality, casino, and gaming industries, they have been incredible stewards of its legacy and vision. Today, Hard Rock Cafe transcends the cafes it started with; it is a global lifestyle brand with world class hotels, casinos, live music venues, and a growing digital presence with Hard Rock Bet. At the same time, we’re reigniting what makes Hard Rock truly iconic, bringing back the energy, the excitement, and the entertainment that set us apart. That means reintroducing immersive, table-side experiences and fun, unexpected moments that transform a meal into a memory. This is more than a reset it’s a bold step forward. One that honors our legacy while building a modern, energized Hard Rock dining experience that’s efficient, engaging, and unforgettable. We’re not just evolving, we’re amplifying. “In addition, we are currently working on some exciting menu developments. By September 2025, we will unveil a brand-new menu bursting with vibrant flavors, refreshing every aspect of our old menu. Our food and beverage offerings will feature beautifully presented dishes and drinks inspired by global cuisines while still staying true to our fan favorites and classics, notably our signature burgers. We aspire to deliver this new menu in a modern, crave-worthy manner without losing the essence of the brand. Furthermore, we intend to reintroduce some of the programming that may have been lost along the way. Through our cafes, we not only seek to create a space that appeals to individuals seeking diverse experiences, whether it is a date night, a family gathering, friends’ get-togethers, or social hours, but also a destination that guests want to visit during late evenings because there is a fantastic concert or event happening at their local Hard Rock Cafe,” Eric shares. Even with this menu revamp, Hard Rock Cafe remains entirely committed to preparing its food from scratch. With that said, maintaining consistency and quality across handmade items can be challenging. Eric reveals the company’s secret to achieving consistently high-quality food in all its locations. “It all boils down to our remarkable team, which is dedicated to collaborating with partners on quality assurance. Daily quality and compliance checks are non-negotiable at every Hard Rock Cafe location, with team members tasting and inspecting all food items as well as ensuring best practices are followed to meet our standards. We are unwavering in our commitment to vibrant food, a consistent supply chain, and full compliance at every level of our business. Additionally, all our operators, franchise partners, and corporate teams are best in class. Recently, we have rebuilt our infrastructure to support our teams and regional vice presidents, whom I refer to as Regional Executive Chefs. They focus not only on compliance and consistency but also on helping to create innovative localized menus. Immersing ourselves in local festivals and traditions is key, as we aim to be more than a mere landmark: a neighbor, a partner, and an integral part of the community,” he enlightens. Transcending the traditional For Hard Rock Cafe, the evolution of its menu is just as crucial as the transformation of its restaurant interiors. As such, the company is currently focused on updating the design of its cafes. “Currently, we are in the brainstorming phase, envisioning the upcoming refresh. So far, we have decided to move away from dark mahogany and the traditional rock‘n’roll ambiance toward a lighter, more modern vibe. Our restaurants instill a special nostalgia that we cherish and aim to preserve as it defines the Hard Rock Cafe experience. Nonetheless, we are looking to infuse a sense of freshness and modernity by adding more windows, enhancing the energy of the space, and leveraging our landmark locations to create a dynamic atmosphere. Updating our furniture, using lighter tables, modernizing our tableware, and incorporating engaging elements tableside are all part of this vision. As a brand rooted in entertainment, we go beyond just serving food in a timely manner, though that is important. We strive to make guests feel excited when their meal arrives, engage them, and create memorable moments.
