As of 2025, Hickory Tavern is currently undergoing an era of transformation, led by Paul Zito, Hickory Tavern Brand President. From new ownership to a fresh identity, the next few years are going to be brimming with enthusiasm, innovation and change. With so many exciting developments underway and further growth on the horizon, Food Chain sat down with Paul to discuss Hickory Tavern’s next phase and what we can expect from the company going forward. “Hickory Tavern was founded in 1997 and quickly became a beloved neighborhood gathering spot throughout the Carolinas,” Paul begins, recounting the company’s history. “Inspired by the original American tavern – where food, drink, and community converged – we’ve always focused on creating a space where heartfelt southern hospitality meets craveable food and memorable experiences. Today, we’re a modern-day American tavern offering a fusion of comfort classics and elevated pub fare, known, not just for our food and drinks, but for how we make people feel. “While the spirit of Hickory Tavern is consistent – joyful, welcoming, and community-centered – each location reflects the local vibe of the neighborhood it serves. All our menus include the signature balance of indulgent and fresh, from gourmet burgers and Southern desserts to craft cocktails and local brews. Some venues feature slight variations or seasonal items to reflect regional preferences, but every Hickory Tavern guest can count on extraordinary hospitality and consistently great food and beverages.” Acquisition alignment Paul stepped into the Brand President position in November 2024 and wasted no time getting stuck in, excited to implement new changes whilst staying true to the company’s heritage. “Since joining the company, I’ve been deeply inspired by the culture of genuine hospitality that exists here,” Paul reveals. “My leadership journey has always centered on building teams and brands that care for people – from guests to team members and communities. Stepping into this role at Hickory Tavern has been about honoring the legacy while also embracing a bold, forward-thinking vision for our future.” The first change – and perhaps one of the most significant for Hickory Tavern – is its acquisition by Artistry Restaurants. Based in Florida, Artistry Restaurants’ mission is to acquire and develop a variety of different restaurant brands, most recently adding Hickory Tavern to its portfolio. The acquisition marks an evolutionary shift in Hickory Tavern’s journey, symbolizing a fresh new chapter in the company’s story. “Becoming part of the Artistry Restaurants’ portfolio has been transformational,” Paul says. “Artistry’s values – centered on heartfelt hospitality, integrity, and putting people first – beautifully align with ours. This partnership has brought new resources, fresh thinking, and strategic support that allow us to reimagine what Hickory Tavern can be, without losing the essence of who we are.” Following the acquisition, Hickory Tavern is looking at redefining its brand identity to better align with its purpose and overall vision. As a part of this, the company is also experimenting with new menu options inspired by traditional pub fare, led by newly appointed Chief Innovation Officer, Chef Cliff Pleau. “We have just completed a deep dive into our branding and are excited to be working on modernizing our restaurants a bit while keeping the upbeat and vibrant atmosphere that people love about Hickory Tavern,” Paul explains. “With Artistry’s support, we’re evolving from a great neighborhood spot into an admired industry brand known for spreading joy through immersive, heartfelt experiences. We’re sharpening our brand story, investing in our team, and reintroducing ourselves to guests with greater intentionality. This next chapter is about leaning into our strengths – like our heartfelt Southern hospitality – and telling that story boldly, both inside and outside our walls.” Heartfelt hospitality With all of these developments in the pipeline, Hickory Tavern is well-positioned for the future.
